So, who else stayed up wayyyy too late last night watching election results, and feels completely drained today? Maybe even depressed???
I know I’m not the only one.
I feel like this whole situation has even zapped my motivation. Dinner tonight consisted of leftover quinoa and a few scoops of Justin’s Maple Almond Butter.
Super yummy, but not a solid dinner.
So tomorrow, I’m making an easily little crockpot meal in the morning, that way dinner is taken care of when I walk in the door tomorrow night.
I call this dish my Chicken Tomato Stew Burrito
Random, I know. But it’s because I generally eat mine poured over some quinoa (shocker!) and my husband loves making his into a burrito. He just drains the juices and puts everything into a tortilla. Then he sprinkles on some cheese and Taco Bell Hot Sauce, and he is good to go.
One crockpot meal- two different takes and two happy people. Why can’t everything be this simple, right?
Chicken Tomato Stew Burrito
Ingredients:
4 chicken breast (I use Foster Farms thin sliced from Costco)
14.4 oz can diced tomatoes with mild green chilies
1/4 cup chopped fresh cilantro
14.4 oz can no sodium chicken broth (Yes it does exist! Then I can control the salt and just season to taste)
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
Directions:
Combine chicken broth, tomatoes, cilantro, garlic powder, onion powder, cumin, and salt in the crockpot.
Lay the chicken breast on top of the mix you just made and season both sides (especially if you used the no salt broth)
Cook on low for 10 hours, or on high for 6 hours. Half-an-hour before serving, remove the chicken and shred it. Then add the chicken back into the crockpot and season to taste.
Added bonus, my husband and I agree this is almost even a little better the next day.
So, here’s to a healthy meal and a small break from the political ads. At least we can all agree that those are two really good things (even if we can’t agree on who to vote for)!!
