Honey Garlic Chicken

Quick, yummy, healthy, and a little sweet. Sound good? Then you have to try this Baked Honey Garlic Chicken recipe!

I recently made this on a night when I had a workout that went ’til 7:00, so I didn’t get going on this little dish ’til 7:30. Needless to say, I was hungry and not in the mood for a big production.

 

But the thing I love about this recipe is it uses my new obsession- local honey.

 

For years, I’ve used the honey that comes out of that little brown bear. I never understood why people make such a big deal about honey.

Then a few months ago, my husband spoke at a conference and got a gift basket that included some local honey from UC Davis.

 

WOW, I totally get it now.

 

So figuring out this little yummy meal made me extra happy because it’s low maintenance, so good, and I always sneak a few tastes of the honey as I cook.

This recipe serves two.

 

Honey Garlic Chicken Recipe

Ingredients:

2 chicken breasts, boneless and skinless, cut into 1-inch pieces

2 eggs, beaten

1 cups Panko breadcrumbs

 

Ingredients for the Honey Garlic Sauce:

¼ cup honey

¼ cup soy sauce

1 garlic cloves, minced

salt and pepper to taste

 

Directions:

Preheat oven to 375 F degrees.

Add the breadcrumbs to a shallow plate. Beat the eggs in another shallow plate.

Season beaten eggs with salt and pepper. Add chicken to the eggs and toss to make sure each piece is fully coated with the egg mixture.

Coat each piece of chicken with breadcrumbs and place on a baking sheet. Bake in preheated oven for about 20 minutes, or until chicken is cooked thoroughly and slightly golden on the outside.

In the meantime, add all the sauce ingredients to a small saucepan. Bring to a boil over medium heat, then turn down the heat and cook for a couple minutes more, stirring occasionally.

Pour sauce over chicken and toss so that the chicken pieces are fully coated. If there’s leftover sauce, use for dipping.

Serve with veggies or quinoa.

So simple and super yummy. It’s a perfectly easy weeknight meal.
