Healthy Sweet Potato Fries are one of my favorite veggies. And they count as a veggie- I promise!
That’s because they are baked not fried (okay- I used a little artistic license with the title of this post).
However, I know you will thank me after you try some of these bad boys.
They are a super yummy, healthy, and an easy side for any dinner. I like to pair them with small chicken breast, tofu, or an egg.
You can even enjoy them as a meal on their own. Many times I’ll make a sweet potato for dinner and this is no different. Just a different format!
Here are the simple steps for the Healthy Sweet Potato Fries.
This makes a serving for one if it’s your main meal, or two if it’s a side.
Ingredients:
1 large sweet potato
1 tablespoon of extra virgin olive oil
1 teaspoon of cinnamon
1 teaspoon of nutmeg
A dash of salt
Recipe:
Preheat oven to 475 degrees
Cut sweet potato wedges, the size of steak fries
Place in bowl
Add extra virgin oil olive, cinnamon, nutmeg and salt
Mix until fries are well coated
Place on a baking sheet
Bake for 50 minutes or until cooked to your favorite level of crispiness!
And that’s it!
I know the time to roast veggies sometimes discourages people from doing it, especially on a weeknight.
But think about it this way, if you get them started as soon as you get home from work, the real “cooking” is done in less than 15 minutes.
Now you have about an hour to take care of some those household chores you are going to have to do anyway. Before you know it, you’ll house will fill with the smell of those healthy sweet potato fries!
Another tip- I always buy a big bag of sweet potatoes from Costco.
They keep for really long time and they are great to have on hand for quick dinners, even when you don’t have time to make healthy sweet potato fries.
For those times, I just wash the sweet potato, wet a paper towel and wrap the potato, and put it in the microwave. For a large sweet potato just microwave for 7 minutes, flip it over, and then microwave again for another 7 minutes.
Let it cool, add some butter and a dash of pumpkin pie spice and dinner is served!
